Fine Finishing – An Alternative Bind Off

I was recently working on a top down hat and needed a flexible bind off for the bottom edge.  Particularly because the rim of the hat is folded up.  It was a 1×1 rib pattern and although tubular bind off would be perfect in this scenario, I want to keep the pattern REALLY SIMPLE.  So I used the k2tog, pass the stitch back to the LH needle, p2tog, pass it back and so on.  It works, it is easy, it has plenty of stretch, but I am not 100% happy with the result.

So I pose the question to the greater minds out in the blogosphere — what would you do for a stretchy, simple, bind off in 1×1 rib?
